The fermentation process is triggered without the addition of yeasts or enzymes that can stimulate or force the extraction process of the aromas from the grapes we use.  We undertake an ancestral working method that allows the grapes to express and produce the true essence of the vineyards where they were grown, as well as the peculiarities of the vintage.
